Legend says - the Goddess of Agave, Mayahuel, hid from her evil grandmother as an agave plant, but was discovered and destroyed. Distraught, her lover—the God of Wind—scattered her remains across the world's richest soils.
Our inspiration comes from this myth. We believe that the Goddess of Agave has been reborn from the red-black volcanic soil of the Indian Deccan Plateau. Along with her 400 rabbit companions, she begins to forge a new identity.
She is a trigger. Her words are her weapons. She stands for truth.
She is Maya Pistola.
Wild Agave Americana plants from India’s Deccan are carefully sorted through and the mature ones that have reached 8 to 10 years are selected.
The thorny leaves are removed and the heart of the Agave, or Piña, is left.
These Piñas are then cooked using steam and high pressure to bring out their natural sugars.
After the Piñas are cooked, they are milled and fermented in wooden vats with yeast.
The resultant wash is then double distilled in a part-copper pot still.
Once distilled, the liquid is transported to the shores of Goa and aged in Virgin American White Oak, Ex-Bourbon or Ex-Red Wine casks.
Finally, aged Agave spirit from various casks is blended, non-chill filtered and bottled. No artificial additives or coloring agents are used.
